    Set in a restored warehouse on West Cimarron Street, our dining room pairs exposed brick and low light with rotating original artwork — every piece on the walls is for sale.

    The kitchen cooks New American with a Colorado accent: bison rib eye, elk strip loin, juniper-braised yak and quail, alongside roast chicken, halibut and a grilled cabbage chop.
